NOTE: Protein powders vary and scoop sizes vary. You want to use enough protein powder to yield 60 grams of protein. Your batter should be workable. If it is too stiff, add some water, a little at a time to make a workable batter.

Preheat oven to 425.

In a large bowl combine the oat bran, baking powder, protein powder, fructose, milk, egg substitute, and oil.

Gently fold in the blueberries. If using frozen blueberries, do not thaw or muffins will be purple!

Line mini muffin pan with paper baking cups, and fill with batter. Bake for 13 minutes. Test for doneness with a toothpick; it should come out moist but not wet.
