To make chicken: Wash and pat chicken dry and cut into strips. Heat oil in non-stick skillet. Add chicken and brown on all sides. Place in crock pot.

Add cheese soup, diced green chilies, and diced tomatoes. Stir to mix. Set to low and cook for 6 to 8 hours.

Cook barley according to package directions (I steam mine in a steamer for 30 minutes). Add cooked barley to crock pot during last half hour of cooking time.

To make coleslaw: Shred cabbage or buy ready-mix coleslaw. Mix with dressing.
