Grill or sauté chicken breast in non-stick pan and dice.

Chop fresh spinach.

Cook penne pasta according to directions and drain. Dice tomatoes and place in a sauce pan.

Crush garlic clove and add to tomatoes. Add nutmeg and cayenne pepper.

Heat to boiling. Reduce heat.

Cube the Neufchatel cheese. Add spinach, cooked pasta and Neufchatel cheese to tomato mixture, folding ingredients until cheese is melted and all ingredients are blended and spinach is just wilted. Do not overcook.

Serve sauce over grilled chicken. Serve strawberries for dessert.
