Dice potatoes and chop peppers and onions. Put olive oil in pan and heat over medium heat.

Put potatoes, onions and peppers in pan. Cook until potatoes are tender. Stir frequently. (Spray cooking spray if needed to keep potatoes from sticking to pan.) Set aside.

Mix egg, egg white and milk (first amount listed) together. Spray pan again, if needed. Make scrambled egg-use salt and pepper sparingly.

Serve eggs and hash browns with nonfat milk to drink.
