Preheat oven to 350 degrees.
1. In medium bowl, combine flour, oat bran, baking soda, protein powder and salt.
2. In large bowl, with mixer at medium speed, beat fructose, brown sugar, peanut butter and oil until creamy. Beat in vanilla and eggs. At low speed, gradually beat in flour mixture just until blended. With spoon, stir in rolled barley and chocolate chips. Batter will be VERY stiff.
3. Drop dough by level measuring tablespoons, 2 inches apart, onto NON-STICK cookie sheet. (Use a small 1-tablespoon scoop.) Bake cookies 6 minutes or until tops are golden.
4. Transfer cookies to wire racks to cool. Repeat with remaining dough.
Cookies will be chewy. Cookies freeze well.
