Wash chicken and pat dry. Pound to 1/4 inch thin with meat mallet.

Slice celery and cucumbers into sticks. Wash tomatoes.

Mix blue and neufchatel cheese together in small bowl, then place mixture on top of flat chicken breast in the center. Roll chicken up, folding ends in.

Place egg white in shallow bowl. In another shallow dish, place bread crumbs.

Roll chicken breast in egg substitute to coat, then bread crumbs to coat.

Spray small non-stick skillet with non-stick spray. Heat butter in the skillet. Add Tobasco sauce. Reduce heat to medium. Place chicken breast in skillet and saute until browned on all sides and juices run clear.
