This recipe makes 4 quesadillas, 1 (strawberries) cup and 1 salsa (cup)

Slice onion into thin slices.

Heat oil in a nonstick skillet over medium high heat. Once hot, add thinly sliced onion.

Cook, browning until sizzle begins to die down (about 3 minutes). Add some water to get them sizzling again and add fructose.

Remove onion from pan and set aside. Turn heat down to medium.

Wipe out skillet and put tortilla in the same skillet sprayed with nonstick vegetable spray.

Add 1/4 cup salsa and 1 Tablespoon of the BBQ sauce per quesadilla.

Top with chicken about 1/4 cup chicken, 1/4 cup cheese, onions and another tortilla.

Once bottom tortilla is crisp, flip and heat through until cheese melts and both tortillas are crisp.

Repeat for each quesadilla.

Serve with remaining salsa and Strawberries for dessert. Enjoy!
