Peel, seed and chop cucumbers and place in a bowl.

Add sour cream and about half of the taco seasoning and mix well.

Peel and dice avocado. Mix with lime juice in a small bowl.

Peel and devein shrimp. Combine shrimp and the rest of the taco seasoning from the packet in a medium bowl.

Heat oil in a large non-stick skillet. Add shrimp and cook for 3 to 5 minutes, until shrimp turn pink. Stir frequently. T
