Trim meat of all visible fat, season to taste with salt and pepper.

Slice the onions and place them on the bottom of the crock pot, place the meat on top.

Pour the smaller amount of barbecue sauce over the meat, and cook for 8 to 10 hours in the crock pot.

Remove meat from the crock, pouring out the fat and juices, but keeping the onions. Put the meat back in the crock pot, cover with the remaining barbecue sauce, and cook for another 30 minutes.

Slice the beef across the grain an place on a platter, discarding any fat. Cover it with the sauce and let it sit for 10-15 minutes.

Slice pitas in half and fill each half with brisket and enjoy!
