Preheat oven to 375.

Slice zucchini, chop onion and mushrooms.

Quick fry the chopped vegetables in a pan sprayed with non-stick cooking spray.

Cook spinach until wilted.

Place veggies and spinach in a pie pan sprayed with non-stick cooking spray.

Mix egg, egg whites, milk, pepper, and salt in a bowl.

Pour the egg mixture and bacon over the top of the veggies. Top with cheese. Bake for 18-20 minutes until knife inserted near center comes out clean. Serve with buttered toast.
