Place eggs in a saucepan and cover with water. Cover saucepan and bring water to a boil. Immediately remove from heat and let eggs stand in hot water for 12 minutes.
Remove from hot water and cool. One quick way to cool is to drain hot water from saucepan and add plenty of ice and cool water back. Then peel and chop eggs.

Place the chopped eggs in a bowl, and stir in the mayonnaise, mustard and green onion. Season with salt, pepper and paprika to taste. Stir and serve on your favorite bread, crackers or lettuce wrap. Optionally add large slices of tomatoes on top.
