This is super quick, super easy, and most of all, delicious. You'll probably never buy store-bought mayo again!

Find a mason jar (small, 16 ounce). IMPORTANT: The jar should be just wider than the head of the immersion blender.

Add egg to jar. Add lemon juice. Then, add olive oil last.

Allow ingredients to settle for 15-30 seconds (it's important the egg and lemon juice are at the bottom).

With the blender off, push the head of the blender down to bottom of jar. All the way.

Turn blender on HIGH (and keep it there) until the mixture starts to turn white and creamy (should happen within a few seconds).

Tilt the blender slightly and slowly pull the blender up through the mixture.

Store sealed in a fridge for up to a few weeks.

*Note: If it doesn't emulsify, the reason is almost certainly the jar is too large. One method that may solve this issue is to make a double batch.
