Active Time: 20 minutes

Total Time: 60 minutes

Preheat oven to 350 degrees.

Either spray a cookie sheet or line with parchment paper or a silpat. These meatballs will stick heavily if not greased!

In a food processor, combine cabbage, carrots, onion, scallions, and 2 tablespoons fresh ginger. Grind until very fine. Transfer to mixing bowl.

Mince garlic.

Add the almond flour, egg, 1 tablespoon coconut amino, 1 tablespoon sesame oil, fresh garlic, and salt to the veggie mixture. Add pork, and mix by hand until well combined.

Roll meat mixture into 2 tablespoons sized meatballs (think cocktail meatball sized). Line them up on the greased cookie sheet. Bake 35-40 minutes or until cooked through and lightly browned. Cool slightly and set aside.

While meatballs are baking, make the sauce:
In a small saucepan, add 1/2 cup coconut aminos, chili sauce, 1 tablespoon sesame oil, fresh garlic, 1 teaspoon fresh ginger, fish sauce, and cider vinegar. Simmer over medium-low heat until slightly reduced.

Pour sauce over meatballs and sprinkle with chopped scallions. Serve immediately.
