Poached Eggs, Spinach, Tomato and Bacon over Sweet Potato Toast

Slice sweet potato into 1/4 inch slices. Rub with salt, pepper, and garlic powder. Place in air fryer and cook for 15 minutes at 400. About halfway through (8 minutes), place bacon on top of sweet potatoes and continue frying until timer goes off.

Meanwhile, place sliced tomatoes and spinach in nonstick skillet, on low and cover until the veggies are tender. Season with salt, pepper and garlic powder and gently stir.

Break eggs into a bowl. Gently Pour eggs over veggies, cover pan and simmer until eggs are set to your liking.

Place sweet potato on plate, top with veggies and egg. Top with bacon slices.
