In a large saucepan, boil potatoes until fork tender, about 15-20 minutes. Drain and cool then slice thin. Set aside.

In a large skillet, fry bacon until crispy. Remove from pan and chop into pieces. Set aside.

In the same pan with bacon grease over medium heat, add chopped onions and fry until golden brown.

Stir in arrowroot starch and fry another minute.

Add in water, vinegar, and coconut sugar (omit sugar for Whole30). Simmer until slightly thickened, stirring constantly.

Remove from heat and pour over potatoes. Add bacon back in and stir to combine.

Add salt and pepper to your liking and sprinkle with dill and parsley. Serve room temperature.
Note for bacon: Must not contain sugar or nitrates
