Heat oil in a large saucepan or stockpot over medium heat.

Saute chopped onion and minced garlic 3-4 minutes until onion is translucent.

Add grated fresh ginger and turmeric to pan and stir to combine.

Add pumpkin and chicken stock to pot, stir to combine.

Simmer over low heat for 30 minutes or until onion is soft.

With a blender, puree soup till smooth.

Add coconut milk and salt and pepper to taste.

Sprinkle with chopped parsley and serve hot.
