Prepare mashed potatoes:
Peel and dice potatoes into 1 inch chunks.

Boil in a saucepot for 30 minutes or until potatoes are tender.

Drain and place potatoes in a mixing bowl. Add almond milk, salt, and ghee. Mash until smooth. Cool in refrigerator.

Prepare pancakes:
In a large skillet, heat oil on medium heat.

Mince onion into small pieces. Dice scallions.

Mix mashed potatoes, egg, onion, scallions, garlic powder and additional salt together in a mixing bowl.

Form patties with your hands and drop into hot pan.

Fry on both sides until golden brown, about 4-5 minutes each side.

Transfer to paper towels and drain excess oil.

Top with almond milk yogurt or ketchup.
