Preheat oven to 350 degrees. Grease a 9×13 casserole dish.

In a large frying pan, cook breakfast sausage until cooked through and no longer pink.

Shred turnips using either a hand cheese shredder or a food processor. The food processor is easier, trust me!

Whisk eggs in a small bowl. Set aside.

In a large mixing bowl, combine cooked sausage, turnips, grated carrots, minced onion, diced red peppers, and egg and toss to coat.

Pour in casserole dish and bake 40-45 minutes until set and top is lightly brown.

Serve warm with salsa.
