Heat oil in large saucepan.

Dice onion. Mince garlic. Cut

Add onions and garlic and fry till onions are translucent, about 5-6 minutes.

Add stock, curry paste, cumin, and salt to pan and boil, covered, for 15 minutes.

Whisk in arrowroot and pumpkin to soup and continue cooking another 10 minutes.

Add coconut cream to soup and heat. Serve immediately.
