Spiralize or shred potato. Wrap in a towel to squeeze out excess water.

Heat waffle iron. Spray with nonstick spray. Place potatoes in waffle iron and cook until crispy brown.

Check to make sure they are not getting too burned.

Remove to plate and salt and pepper if you like. Spray waffle iron again with nonstick spray and carefully crack eggs into waffle iron wells.

Carefully lower top of waffle iron and let egg cook to your liking. Carefully remove egg with spatula and place on top of hash browns. Top with hot sauce if desired.
