Start with a large piece of foil, and place green beans in the center of the foil and fold into a packet. Place on baking sheet.

On another piece of foil (large enough to fold each piece of fish into), spray with non-stick vegetable spray.

For each piece of salmon (around 4 ounces), place piece of salmon on a bed of sliced onion. Mince garlic and sprinkle on top of salmon. Season to taste. Lemon juice can be sprinkled over salmon before baking or afterwards (lemon juice tends to bleach the salmon during cooking, losing its pink color, but lemon is less intense this way).

Fold foil into a packet, place onto the same baking dish as the packet of beans, and bake at 400F for 15-20 or until salmon is cooked and green beans are steamed all the way through.

Once salmon is fully cooked, open the packet and top the fish with real shredded parmesan cheese and place under the broiler for a few minutes until cheese bubbles and browns (be careful here---watch it under the broiler).

Serve applesauce for dessert.
