Spray medium or large frying pan with cooking spray. Dice up all vegetables. Saute onions, peppers, red potatoes, mushrooms and spinach just until all are close to being done. Then beat egg and milk together and pour over mixture. Continue to cook until egg is solid. When cooked, remove from pan onto plate and sprinkle cheese over top. To save time buy everything already diced.
